Impossibly Easy Pumpkin Pie (bisquick...too Easy :)

Total Time: 50 mins Preparation Time: 10 mins Cook Time: 40 mins

Ingredients

  • Servings: 6
  • 1 cup canned pumpkin (not pumpkin pie mix)
  • 1/2 cup original bisquick baking mix
  • 1/2 cup sugar
  • 1 cup evaporated milk
  • 1 tablespoon butter or 1 tablespoon margarine, softened
  • 1 1/2 teaspoons pumpkin pie spice
  • 1 teaspoon vanilla
  • 2 eggs
  • whipped topping, if desired

Recipe

  • 1 heat oven to 350ºf.
  • 2 grease 9-inch pie plate.
  • 3 stir all ingredients except whipped topping until blended.
  • 4 pour into pie plate.
  • 5 bake 35 to 40 minutes or until knife inserted in center comes out clean.
  • 6 cool 30 minutes.
  • 7 refrigerate about 3 hours or until chilled.
  • 8 serve with whipped topping.
  • 9 store covered in refrigerator.
