- 1/2 cup butter, melted
- 1 cup flour
- 1 cup sugar
- 4 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup half-and-half or 1 cup milk
- 1 teaspoon vanilla
- 3 cups cooked pumpkin
- 1 cup evaporated milk
- 2 eggs
- 1 cup sugar
- 1/2 cup packed brown sugar
- 1 tablespoon flour
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1/4 teaspoon ginger
- 1/4 teaspoon clove
- 1/4 teaspoon nutmeg
- 1 tablespoon butter
- 2 tablespoons sugar
Recipe
- 1 set oven to 350 degrees.
- 2 pour the melted butter into a 13 x 9-inch baking pan; set aside.
- 3 in a bowl, combine the flour, sugar, baking powder and salt. stir or whisk in the milk or half and half (if using) until smooth. pour into dish containing the melted butter.
- 4 in a small bowl, beat the pumpkin, evaporated milk and eggs. combine remaining ingredients into the pumpkin mixture; mix to combine. pour over crust mixture do not stir!.
- 5 dot with 1-2 tbsp butter. sprinkle with 2-3 tbsp sugar.
- 6 bake for 55-60 minutes, or until top is brown, and a knife inserted near the middle comes out clean -- delicious!
