Magic Pumpkin Buckle

Ingredients

  • Servings: 8
  • 1/2 cup butter, melted
  • 1 cup flour
  • 1 cup sugar
  • 4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup half-and-half or 1 cup milk
  • 1 teaspoon vanilla
  • 3 cups cooked pumpkin
  • 1 cup evaporated milk
  • 2 eggs
  • 1 cup sugar
  • 1/2 cup packed brown sugar
  • 1 tablespoon flour
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/4 teaspoon ginger
  • 1/4 teaspoon clove
  • 1/4 teaspoon nutmeg
  • 1 tablespoon butter
  • 2 tablespoons sugar

Recipe

  • 1 set oven to 350 degrees.
  • 2 pour the melted butter into a 13 x 9-inch baking pan; set aside.
  • 3 in a bowl, combine the flour, sugar, baking powder and salt. stir or whisk in the milk or half and half (if using) until smooth. pour into dish containing the melted butter.
  • 4 in a small bowl, beat the pumpkin, evaporated milk and eggs. combine remaining ingredients into the pumpkin mixture; mix to combine. pour over crust mixture do not stir!.
  • 5 dot with 1-2 tbsp butter. sprinkle with 2-3 tbsp sugar.
  • 6 bake for 55-60 minutes, or until top is brown, and a knife inserted near the middle comes out clean -- delicious!
