Cranberry Pumpkin Bread

Total Time: 1 hr 10 mins Preparation Time: 15 mins Cook Time: 55 mins

Ingredients

  • 2 1/4 cups flour
  • 1 tablespoon pumpkin pie spice
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup dried cranberries
  • 2 eggs, beaten
  • 2 cups sugar
  • 1 3/4 cups canned pumpkin puree (15 oz can)
  • 1/2 cup vegetable oil
  • 1/2 cup pecans, chopped

Recipe

  • 1 heat oven to 350 degrees.
  • 2 combine flour, spice, baking powder, and salt in a bowl and blend to mix well.
  • 3 combine eggs, sugar pumpkin, and oil in a seperate mixing bowl.
  • 4 gradually pour in dry ingredients and mix throughly.
  • 5 spoon into 2 greased 9x5x2 inch loaf pans.
  • 6 bake at 350 degrees for 55 minutes or until toothpick comes out clean.
