Matthew's Healthy Low Fat Vegan Carrot Spice Muffins

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • 1 3/4 cups whole wheat graham flour
  • 1/4 cup sugar
  • 1 tablespoon ground flax seeds
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 3/4 teaspoon ginger
  • 1/4 teaspoon pumpkin spice
  • 1/2 teaspoon salt
  • 2/3 cup unsweetened applesauce
  • 1/2 cup vanilla soymilk
  • 1/4 cup water
  • 1 teaspoon vanilla
  • 1 cup shredded carrot
  • 1/2 cup raisins

Recipe

  • 1 mix dry ingredients in a large bowl, add the liquid ingredients and stir just long enough to combine. add the carrots and raisins and stir to combine.
  • 2 preheat oven to 400 degrees. spray muffin pans with non-stick spray. spoon the batter into the muffin cups. bake for 15 to 20 minutes, until toothpick comes out clean.
