Mashed Pumpkin And Bean Pots

Ingredients
- Servings: 4
- 500 g pumpkin, peeled and chopped
- 300 g butter beans, drained
- 3 tablespoons cream
- 1 egg, beaten
- 1/2 cup fresh breadcrumb
- 2 teaspoons butter
- maple syrup or honey, to drizzle
Recipe
- 1 cook pumpkin in boiling water till tender.
- 2 mash pumpkin and drained beans together.
- 3 stir in cream and season with salt and pepper.
- 4 spoon into 4 x 1 cup moulds.
- 5 sprinkle with breadcrumbs, dot with butter.
- 6 bake 200 c for 25 minutes.
- 7 drizzle with maple syrup and serve.
