Diabetic Pumpkin Pie

Total Time: 55 mins Preparation Time: 10 mins Cook Time: 45 mins

Ingredients

  • Servings: 8
  • 9 inches unbaked pie shells
  • 2/3 cup brown sugar substitute
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons cinnamon
  • 1/4 teaspoon nutmeg
  • 1/8 teaspoon clove
  • 1/8 teaspoon ginger
  • 2 cups pumpkin
  • 3 eggs, beaten
  • 3/4 cup evaporated milk
  • 1/4 cup milk

Recipe

  • 1 prehead over to 425.
  • 2 combine sweetener, salt and spices.
  • 3 blend in pumpkin, eggs and milks.
  • 4 pour into pastry shell.
  • 5 bake 425 for 15mins
  • 6 reduce heat to 400 and bake until knife inserted comes out clean.
