Oat Me Oh My, Healthy Oatmeal Cookies

Ingredients
- 1/4 cup splenda granular
- 2 tablespoons brown sugar (not packed)
- 2 tablespoons pumpkin puree
- 2 tablespoons light butter or 2 tablespoons margarine
- 2 tablespoons liquid egg substitute
- 1/4 teaspoon vanilla
- 1/4 teaspoon cinnamon
- 1/4 teaspoon baking soda
- 1/3 cup whole wheat pastry flour
- 1/2 cup oats (not instant)
- 2 tablespoons dried sweetened cranberries
- 1 tablespoon chocolate chips
- 2 tablespoons flaked coconut
- 2 tablespoons raisins
Recipe
- 1 preheat oven to 375 f.
- 2 combine splenda, brown sugar, pumpkin and butter, egg substitute and vanilla until thoroughly mixed.
- 3 add in all the dry ingredients, except oats and "add in's".
- 4 use a small melon scoop to place cookies about 1 inch apart on a greased cookie sheet.
- 5 gently press down on the cookies with a fork.
- 6 bake in the oven for 10-12 minutes.
