Oat Me Oh My, Healthy Oatmeal Cookies

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • 1/4 cup splenda granular
  • 2 tablespoons brown sugar (not packed)
  • 2 tablespoons pumpkin puree
  • 2 tablespoons light butter or 2 tablespoons margarine
  • 2 tablespoons liquid egg substitute
  • 1/4 teaspoon vanilla
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon baking soda
  • 1/3 cup whole wheat pastry flour
  • 1/2 cup oats (not instant)
  • 2 tablespoons dried sweetened cranberries
  • 1 tablespoon chocolate chips
  • 2 tablespoons flaked coconut
  • 2 tablespoons raisins

Recipe

  • 1 preheat oven to 375 f.
  • 2 combine splenda, brown sugar, pumpkin and butter, egg substitute and vanilla until thoroughly mixed.
  • 3 add in all the dry ingredients, except oats and "add in's".
  • 4 use a small melon scoop to place cookies about 1 inch apart on a greased cookie sheet.
  • 5 gently press down on the cookies with a fork.
  • 6 bake in the oven for 10-12 minutes.
