Chicken And Greens In Coconut Milk

Ingredients

- 2 1/2 kg chicken, cut into serving pieces
- 2 teaspoons oil
- 1 1/2 cups coconut milk
- 750 g spinach
- 500 g pumpkin, peel
- 2 garlic, crushed
- 2 cm piece ginger, finely chopped
Recipe
- 1 remove the skin from the chicken and lightly brown in the oil with 1 clove of the garlic.
- 2 add 1/2 cup or so of the coconut milk and the remaining garlic. simmer for about 10 minutes.
- 3 skin and cut the squash into cubes. add to chicken. simmer for about 5 more minutes.
