Chicken And Greens In Coconut Milk

Total Time: 55 mins Preparation Time: 10 mins Cook Time: 45 mins

Ingredients

  • Servings: 6
  • 2 1/2 kg chicken, cut into serving pieces
  • 2 teaspoons oil
  • 1 1/2 cups coconut milk
  • 750 g spinach
  • 500 g pumpkin, peel
  • 2 garlic, crushed
  • 2 cm piece ginger, finely chopped

Recipe

  • 1 remove the skin from the chicken and lightly brown in the oil with 1 clove of the garlic.
  • 2 add 1/2 cup or so of the coconut milk and the remaining garlic. simmer for about 10 minutes.
