Chunky Apple Spice Cake

Total Time: 50 mins Preparation Time: 10 mins Cook Time: 40 mins

Ingredients

  • 1/2 cup butter, softened
  • 1 cup light brown sugar, firmly packed
  • 2 eggs
  • 2 teaspoons vanilla
  • 1 cup flour
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon allspice
  • 1/2 teaspoon salt
  • 2 cups apples, peeled and chopped
  • 1/2 cup walnuts
  • 1/2 cup raisins (optional)
  • 1/2 cup butter or 1/2 cup margarine, melted
  • 1/2 cup whipping cream
  • 1 cup light brown sugar, firmly packed
  • 2 tablespoons vanilla

Recipe

  • 1 preheat oven to 350°f.
  • 2 beat butter and brown sugar for 5 minutes in a mixing bowl.
  • 3 beat in eggs and vanilla until blended. set aside.
  • 4 in a separate bowl mix flour, pumpkin pie spice, allspice and salt.
  • 5 gradually add to sugar mixture; beating until well blended.
  • 6 stir in apples, nuts and raisins (if desired).
  • 7 pour into a greased 9 inch baking pan,.
  • 8 bake 35-40 minutes or until toothpick inserted in center comes out clean.
  • 9 cool on a wire rack for 10 minutes. serve warm with vanilla butter sauce.
  • 10 vanilla butter sauce:.
  • 11 combine butter and whipping cream with brown sugar.
  • 12 bring to a boil over medium heat.
  • 13 reduce heat; simmer for 10 minutes or until slightly thickened.
  • 14 remove from heat; stir in vanilla.
  • 15 serve warm over cake.
