Oven Roasted Maple Gorp

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • Servings: 8
  • 3/4 cup maple syrup
  • 1 cinnamon stick
  • 1 vanilla bean, split (or 1 tsp. vanilla)
  • 1 cup oats
  • 1 cup hazelnuts, peeled (or pine nuts)
  • 2 cups whole natural almonds
  • 1/2 cup raisins
  • 1/2 cup dried sweetened cranberries (craisins)
  • 1/2 cup shelled pumpkin seeds (or sunflower seeds)
  • 1 cup m&m's peanut chocolate candy

Recipe

  • 1 preheat oven to 375*f.
  • 2 place the maple syrup on the stove with cinnamon and vanilla over medium low heat to incororate the flavors. warm the syrup for 3 minutes, and remove. if you don't have the vanilla beans, substitute 1 teaspoons vanilla.
  • 3 combine oats, hazelnuts(or pine nuts), almonds, raisins, craisins and seeds in a bowl. toss with maple syrup and remove the cinnamon stick and vanilla bean.
  • 4 spread the maple coated mixture out on a baking sheet and roast 15 minutes. remove the nuts from oven and transfer to another cold pan, tossing the mix to quick-cool it.
  • 5 once cool, toss with m&ms and eat, or pack for a hike! enjoy!
