Healthy Pumpkin Sourdough Discard Pancakes

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • 1 1/2 cups whole wheat flour
  • 1 tablespoon sugar
  • 1 tablespoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon vanilla extract
  • 1 cup whole milk (more as needed)
  • 3 eggs
  • 1 cup sourdough starter
  • 1 cup pumpkin

Recipe

  • 1 dump all in a bowl.
  • 2 preheat pan w/non-stick spray.
  • 3 whisk together. add more milk as needed.
  • 4 test pan for readiness by waiting until water droplets sizzle.
  • 5 drop by 1/4 c amounts onto hot pan. flip when bubbly.
