Healthy Pumpkin Sourdough Discard Pancakes

Ingredients
- 1 1/2 cups whole wheat flour
- 1 tablespoon sugar
- 1 tablespoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon vanilla extract
- 1 cup whole milk (more as needed)
- 3 eggs
- 1 cup sourdough starter
- 1 cup pumpkin
Recipe
- 1 dump all in a bowl.
- 2 preheat pan w/non-stick spray.
- 3 whisk together. add more milk as needed.
- 4 test pan for readiness by waiting until water droplets sizzle.
- 5 drop by 1/4 c amounts onto hot pan. flip when bubbly.
